:: Great Soup - Chicken, Apple, & Curry ::

This receipe is from the Best of the Bridge & is one of our favorites. Everytime I make it, Jody always requests a second batch to freeze. Partly best he loves it and partly because he knows I don't cook enough for it to come back into the receipe rotation very often. Cooking isn't my strong suit. I'm working on it though. *smile* I just bought a new apron for motivation!

2 Tbsp. olive oil
2 cups chopped celery
1 cup chopped carrots
1/2 cup chopped onion
4 cups chicken broth
1 cup chopped apple
1/2 cup uncooked rice
2 tsp curry powder
1/8 tsp dried thyme
1/2 cup half & half
2 Tbsp flour
1 cup chopped cooked chicken (I usually just do 2 chicken breasts)
S & P to taste

In a large saucepan, heat oil & cook celery, carrots & onion for 5 minutes. Add broth, apple, rice, curry powder & thyme. Bring to a boil. Reduce heat & simmer, covered, for 20 minutes (or until the rice is tender).


Blend cream & flour together. Stir into the soup & stir until its thickened & bubbly (it usually just thickens a little bit). Stir in the chicken, season to taste & serve!

*If you run out of curry powder, I've used butter chicken mix before for the simple reason that its the same shade of yellow. Just use slightly less than 2 Tsp... like maybe 1 1/2. Its totally not the same spices at all... But, surprisingly, it tasted good too. Who knew? :)

Things I'm Loving

With a little one on the way, we've been throwing around nursery ideas over that few months. Making an actual decision is WAY harder than I thought it would be... We want it to be a nursery, but not too baby-ish. Gender specific without being over-the-top boyish. Modern but still warm & homey. You get the idea...

I thought we'd have lots of time for decisions, but I've been hearing too many stories lately of people going into labour weeks, even a month, early. So, next week, when our own bedroom will be finished (more on that later!), we're starting the nursery. And by "we", I mean Jody. My husband really needs his own home reno show, like Mike Holmes meets Sarah Richardson. *smile*

Obviously, a little girly (think more blue, less pink), but the tree wall decal is SO great!


I'm really liking the orange & bright blue combo! Again, a little girly, but that can be easily changed to something manly. :)

Who Knew?


See this picture above? That’s us… your brand new parents. We didn’t know it at the time, but I was already pregnant with you in this picture. I actually made a bet with your dad that if I was pregnant, I would get to buy a piece of art on our trip (in San Fran). I'm still waiting for him to hold up his end of the bargin. :)

Even though I'm almost 27 weeks pregnant, the idea that we're going to be parents, real parents, is pretty crazy. I had a minor meltdown a few weeks ago when I realized that we have no clue how to raise a polite, happy, brillant child. But what I do know is:

1. We know about love & laughter. I think these are both very important. We have a lot of fun together. He's my favorite person. He makes me laugh everyday. And I know how to do the robot dance, which makes him laugh. Probably because I'm a really terrible robot.

2. Minnow is pretty cool. And she's your big fur-sister. And we raised her. So, hopefully that's a good indication. *shrug* And, be forewarned, she'll probably lick you in the mouth on a regular basis.

3. We like adventures. We hope you like them too. We don’t sit around much - so when you get here, expect to be bundled up and carried along for the ride.
